I have a strat body that had damaged finish so I removed it to start from scratch. I was thinking as long as I am at this point I could veneer the body with an interesting wood. My question is how would I cut the veneer to wrap around the sides of the guitar? Would I veneer the top separate from the sides and back? Or would I somehow cut the top piece so that it would go around the top onto the sides?

I think veneering a complex shape like a strat is going to be unpossible imho! Maybe top and back as a separate inset or something, but don't wrap I think. Good luck!

Find someone near you with a vacuum bag veneer press. That is the
only way to veneer something like a contoured guitar body.

You could veneer the top and bank and leave the sides alone, maybe
refinish the sides very dark to hide the damage.
